Turkish Soup

Sogan Corbasi - ONION SOUP

ONION SOUP (SOĞAN ÇORBASI)

 

Ingredients: (4 servings)

. 8 glasses of meat broth

. 2 tablespoons margarine

. 5 onions

. ½ grated Gruyere cheese

. 1 teaspoon flour

. Salt

 

Melt the margarine in a saucepan. Cut the onions into ‘rings’ and fry it until it becomes lightly brown. Add flour and roast for 3 minutes. Add meat broth and salt; leave it boil. After the onions get tender, mash and put into a different cup. Turn the heat on once again, add grated Gruyere cheese. When it boils turn the heat off and serve hot.
