Turkish Soup

  • Kirmizi Mercimek Corbasi Pirincli- RED LENTIL SOUP WİTH RICE

    RED LENTIL SOUP WİTH RICE (PİRİNÇLİ KIRMIZI MERCİMEK ÇORBASI)

     

    Ingredients: (4 servings)
    · 1 glass red lentils
    · 1 lt. meat stock
    · 2 small onions

    · 2 medium size tomatoes
    · 1 medium size potato

    · 2 tablespoons rice

    . Salt and pepper

     

    Wash the lentils and rice. Add peeled and chopped onions and tomatoes, peeled poatao cut into very small cubes and the meat stock. Cover and cook on low heat for 45 minutes.

  • Suzme Mercimek Corbasi - STRAINED LENTIL SOUP

    STRAINED LENTIL SOUP (SÜZME MERCİMEK ÇORBASI)

     

    Ingredients: (4 servings)
    · 1 lt. meat stock
    · 2 tablespoons butter
    · 50 gr. flour

    · Salt and pepper
    · 125 gr. green lentiles
    · 4-5 slices of stale bread

    · Oil for frying

     

    Pick over and wash lentiles, add water to cover and bring to boil. Cover and simmer until the liquid is absorbed. Gradually add the hot meat stock and sieve or put through an electric blender. Melt the butter, add the flour and stir over medium heat for 1-2 minutes, gradually add the soup. Cover and let simmer for 10 minutes. Garnish the soup with croutons fried in some oil.

  • Terbiyeli Sehriye Corbasi - VERMICELLI SOUP WITH EGG SAUCE

    VERMICELLI SOUP WITH EGG SAUCE (TERBİYELİ ŞEHRİYE ÇORBASI)

     

    Ingredients: (4 servings)
    · 1 lt. meatstock or chicken broth
    · 100 gr. vermicelli
    · 1 egg yolk

    · ½ lemon
    · 1 tablespoon butter 

    . Salt and paprika

     

    Add the vermicelli to the boiling stock. Add salt and let simmer until the vermicelli are soft. Beat the egg yolk with lemon juice. After diluting it with a little of the hot soup, stir it into the pan, stirring all the time. Garnish the soup with melted butter mixed with some paprika.

  • Tarhana Corbasi - DRIED CURDS SOUP

    DRIED CURDS SOUP (TARHANA ÇORBASI) Ingredients:
    · 4 glasses of meat broth
    · 1 glass tarhana
    · 250 gr. yoghurt
    · 2 tablespoons margarine
    · 1 tablespoon unsalted tomato paste
    · Salt to taste
    · Red pepper
    · Peppermint
    Put the margarine and the ground meat in a saucepan and fry the meat well. Add the tomato paste and salt and mix until the tomato paste blends in well. Pour in 4 glasses of meat broth and bring to the boil. In the meantime, put 1 glass of meat broth into a bowl with the tarhana and melt tarhana by mixing. After that add yoghurt by mixing. Pour this mixture into the saucepan slowly and stir constantly. After 10 minutes of stirring, the soup will get thicker.
    Fry small bread cubes in a knob of butter, sprinkle with red pepper (optional), pour a pinch of peppermint over the soup as a last and serve with the soup (also add the butter).

     

  • Taneli Yesil Mercimek Corbasi - GREEN LENTIL SOUP WITH ORZO

    GREEN LENTIL SOUP WITH ORZO (TANELİ YEŞİL MERCİMEK ÇORBASI)

     

    Ingredients: (6 servings)
    · 4 glasses of meat broth
    · 1 onion
    · 1 tablespoon flour

    · 1 teacup of green lentil
    · 2 tablespoons butter 

    . 2 tablespoons orzo

    . Salt and peppermint.

     

    Melt the margarine in a saucepan. Pour chopped onion into it. Cook until it becpmes lightly brown. Add flour and bring to the boil. Then add meat broth and salt. Pour well-cooked green lentil into the boiling water and leave on the medium heat until lentil gets tender. Then add orzo. Optionally you may prepare sauce of milk. Add peppermint and serve.

  • Sehriyeli Domates Corbasi - TOMATO SOUP WITH VERMICELLI

    TOMATO SOUP WITH VERMICELLI (ŞEHRİYELİ DOMATES ÇORBASI)

     

    Ingredients: (4 servings)
    · 1 lt. meat stock
    · 100 gr. vermicelli

    · 2 tablespoons butter

    · 3 ripe tometoes
    · 1 bunch parsley

    . Salt and pepper

     

    Boil the meat stock. Add the vermicelli and the tomatoes, peeled and cut into small pieces. Let simmer for 10 minutes, until the vermicelli are soft. Garnish with melted butter and chopped parsley.

  • Sutlu Patates Corbasi - POTATO SOUP WITH MILK

    POTATO SOUP WITH MILK (SÜTLÜ PATATES ÇORBASI)

     

    Ingredients: (4 servings)

    . 4 potatoes

    . 5 glasses of meat broth

    . 1 egg

    . 1 glass of milk

    . 2 cloves of garlic

    . 1 teaspoon salt

     

    First of all, mash the well-boiled potatoes and pur into the boiling meat broth. Add salt and chopped garlic. Cook on medium heat for 15 minutes. Beat the milk with egg yolks in another cup. After you turn the heat off, stirring constantly pour this mixture onto the soup little by little. Serve hot. 

  • Sutlu Irmik Corbasi - SEMOLINA SOUP WITH MILK

    SEMOLINA SOUP WITH MILK (SÜTLÜ İRMİK ÇORBASI)

     

    Ingredients: (4 servings)

    . 2 glasses of milk

    . 2 glasses of water

    . 1 glass of semolina

    . 2 tablespoons margarine

    . 1 teaspoon salt

     

    Melt the margarine in a saucepan. Add 1 glass of semolina and lightly brown it. After you turn the heat off, add 2 glasses of milk and salt. Stirring constantly, let simmer for 15 minutes. Serve hot. 

  • Sut Corbasi - MILK SOUP

    MILK SOUP (SÜT ÇORBASI)

     

    Ingredients: (4 servings)

    . 4 glasses of milk

    . 3 tablespoons margarine

    . 2 glasses of tomato juice

    . Salt

     

    Pour uncooked milk and tomato juice into a saucepan. Add margarine and salt. Stirring constantly, leave it cook until it boils. As soon as it boils, stop stirring. Let simmer for 10 minutes and turn the heat off.

  • Sogan Corbasi - ONION SOUP

    ONION SOUP (SOĞAN ÇORBASI)

     

    Ingredients: (4 servings)

    . 8 glasses of meat broth

    . 2 tablespoons margarine

    . 5 onions

    . ½ grated Gruyere cheese

    . 1 teaspoon flour

    . Salt

     

    Melt the margarine in a saucepan. Cut the onions into ‘rings’ and fry it until it becomes lightly brown. Add flour and roast for 3 minutes. Add meat broth and salt; leave it boil. After the onions get tender, mash and put into a different cup. Turn the heat on once again, add grated Gruyere cheese. When it boils turn the heat off and serve hot.

  • Sebze Corbasi - VEGETABLE SOUP

    VEGETABLE SOUP (SEBZE ÇORBASI)

     

    Ingredients: (6 servings)

    . 3 potatoes

    . 2 leeks

    . 3 carrots

    . 3 leaves of cabbage

    . 1 celeriac

    . 2 tablespoons margarine

    . 1 tablespoon flour

    . 4 glasses of meat broth

    . 1 onion

    . Tomato paste, salt and water

     

    Firstly, clean vegetables and cut into thin strips. Melt the margarine with chopped onion in a saucepan. Lightly brown it. Add 1 tbalespoon flour, stir once or twice. Add all of the vegetables and leave it boil. When potatoes get tender, pour them all into a filter and mash. Again put them into the saucepan. Cook on medium heat for 20 minutes. Optionally, you may prepare a sauce of milk. Let simmer for 5 minutes and serve. 

  • Pirincli Domates Corbasi - TOMATO SOUP WITH RICE

    TOMATO SOUP WITH RICE (PİRİNÇLİ DOMATES ÇORBASI)

     

    Ingredients: (6 servings)
    · 8 glasses meat stock
    · 4 large tometoes or 150 gr tomato paste

    · 1 tablespoon flour

    · 2 tablespoons margarine
    · 65 gr. rice

    . 2 teaspoons salt

     

    Boil the rice in 2 glasses of water. Drain. Peel the tomatoes and cut them into small pieces. Melt the margarine. Add the tomatoes or tomato paste dissolved in ½ cup of water. Cook for 15 minutes, stirring from time to time. Add the flour and salt. Cook for 2 minutes more, stirring constantly. Slowly add the meat stock. Cover and let simmer on low heat for 20 minutes. Add the rice. Let simmer for 5 minutes more.

  • Tavuk Corbasi - Chicken SOUP

    BROILER SOUP (Tavuk ÇORBASI)

     

    Ingredients: (4 servings)

    . 2 broilers

    . 3 tomatoes

    . 1 bunch of celeriac leave

    . 1 bunch of parsley

    . 2 teacups of rice

    . Salt and water

     

    Pour 12 glasses of water into a large saucepan. Add cleaned and peeled celeriac, tomatoes which were cut into small pieces and salt. Let it cook on medium heat until it boils. Then add broilers. After it boils for 45 minutes, and when the broilers get tender, take them out. Pour rice into the remaining water in saucepan and cook for 20 minutes more. Before you take off the heat, shred parsley and pull broilers to shreds. Let simmer for 10 minutes and serve hot.  

  • Nane Corbasi - PEPPERMINT SOUP

    PEPPERMINT SOUP (NANE ÇORBASI)

     

    Ingredients: (4 servings)

    . 4 glasses of water

    . 2 tablespoons flour

    . 2 tablespoons yoghurt

    . 1 tablespoon margarine

    . 1 teaspoon peppermint

    . Salt

     

    Firstly, boil 4 glasses of water. In another cup, melt flour with water. Pour it into the boiling water and cook on medium heat for 10 minutes. Add yoghurt, peppermint, salt and margarine. Let simmer for a while and serve. 

  • Peynir Corbasi - CHEESE SOUP

    CHEESE SOUP (PEYNİR ÇORBASI)

     

    Ingredients: (6 servings)

    . 1 teacup of cheese encased in a skin

    . ½ teacup of grated pale yellow cheese

    . ½ teacup of vegetable oil

    . 1 celery stalk

    . 1 pack of meat stock

     

    Melt the margarine in a saucepan. Stir it with a wooden tablespoon by adding flour little by little. Add 4 glasses of boiling water together with meat broth. Cut the cheese encased in a skin into small pieces and mix with grated pale yellow cheese. Pour this mixture into the soup. Cook for 5 minutes and turn the heat off. Add black pepper and serve.
