TOMATO PASTE - DOMATES SALCASI

TOMATO PASTE (DOMATES SALÇASI)

 

Ingredients:
· 1 kg. tomatoes for paste
· 500 gr. beef  bones

· 2 carrots

· 1 celeriac

· 2 onions

· 2 cloves of garlic

· 3 tablespoons olive oil

· 2 tablespoons flour

· 2 leaves of daphne

· 3 glasses water

· Salt and black pepper

 

Break the bones into small pieces. Cut the onions in big pieces. Chop celeriac and carrots in rings. Pour them all into a saucepan pan and fry with olive oil. Add salt and black pepper and cook until it is lightly brown. When it is cooked, add tomatoes peeled and chopped in big pieces. Cook on medium heat for 5 minutes more. Add water. Cook on low heat for 2 hours. Turn the heat off. Drain and pour into another saucepan. Finally add enough flour and use in pastries.
