  • GREEN BEAN SAUTE - YESIL FASULYE SOTESI

    GREEN BEAN SAUTE (YEŞİL FASULYE SOTESİ)

     

    Ingredients:

    · 500 gr. green bean
    · 1 tablespoon butter

    · Salt and water

     

    Wash and clean the green beans. Cut them into pieces. Put it into a sucepan. Add some water and cook. Turn the heat off. Pour some cold water and drain it. Melt the butter in a frying pan. Add green beans and salt. Cook it for 10 minutes. You may serve it with all the meals.

  • EGGPLANT PUREE - PATLICAN PURESI

    EGG-PLANT PUREE (PATLICAN PÜRESİ)

     

    Ingredients:

    · 6 egg-plants
    · 1½ tablespoons flour

    · 1½ butter

    · 1 glass milk

    · Salt, black pepper and water

     

    Roast the egg-plants on high heat. After you peel, wash them in a bowl. Chop them into small strips. Put butter into a frying pan. Add flour and lightly brown. Then add the egg-plants. Pour milk slowly. Put salt and black pepper and cook it for 20 minutes. You may serve with meat dishes.

  • POTATOE PUREE - PATATES PURESI

    POTATOE PUREE (PATATES PÜRESİ)

     

    Ingredients:

    · 6 potatoes
    · 2 glasses milk

    · 1 tablespoon butter

    · Salt, black pepper and water

     

    Peel the potatoes and slice them. Add enough water to cover it and cook until the potatoes are tender. Turn the heat off. Grate the potatoes and put them into a saucepan. Add butter, black pepper and salt. Cook it on medium heat. Pour the milk little by little stirring constantly. Take it out of the heat after it becomes tender. Rub with butter.

  • MIXED SAUTE - KARISIK SOTE

    MIXED SAUTE (KARIŞIK SOTE)

     

    Ingredients:

    · 100 gr. green bean
    · 1 zucchini

    · 1 carrot

    · 1 tablespoon butter

    · Salt, black pepper and water

     

    Boil green beans, zucchini and carrot in different saucepans. Drain their water and chop into small pieces. Put butter into a frying pan and melt it. Add the vegetables. Put salt and black pepper. Mix it well. You may use it with all the meals.

  • SPINACH PUREE - ISPANAK PURESI

    SPINACH PUREE (ISPANAK PÜRESİ)

     

    Ingredients:

    · 500 gr. spinach
    · 1 tablespoon butter

    · 1 large onion

    · Salt, black pepper and water

     

    Clean and wash the spinach. Boil it in some water. Put it into a saucepan. Add 2 glasses of water. Cook it until it gets tender. Sequeeze it to extract excess water. Cut the onion ito thin strips. Put the butter into a saucepan and add chopped onion.. Lightly brown. Add spinach and roast for 2 minutes. Put ½ glass of water, salt and black pepper and cook.

  • BOILED CORN GARNISH - HASLANMIS MISIR GARNITURU

    BOILED CORN GARNISH (HAŞLANMIŞ MISIR GARNİTÜRÜ)

     

    Ingredients:

    · 1 glass coarse corn
    · Butter, salt and water

     

    Put the corn into a saucepan. Add water and boil it. Drain its water. Put the corns into a frying pan. Add some butter and salt. Boil it for 15 minutes. You may use it in meat dishes.

  • CARROT SAUTE - HAVUC SOTESI

    CARROT SAUTE (HAVUÇ SOTESİ)

     

    Ingredients:

    · 2 carrots
    · 1 tablespoon butter

    · 1 tablespoon granulated sugar

    · Salt, black pepper and water

     

    Boil the carrots in water. Drain it and pour cold water over it. Cut the carrots into four pieces, then cut these pieces into diagonal pieces. Put them into a frying pan. Add butter, granulated sugar, salt and black pepper. Cook it on low heat until it becomes saute. Use it with grilled meat.

  • PINE NUTS OR WALNUTS PASTE - FISTIKLI VEYA CEVIZLI TARATOR

    PINE NUTS OR WALNUTS PASTE (FISTIKLI VEYA CEVİZLİ TARATOR)

     

    Ingredients:

    · 100 gr. pine nuts or walnuts

    · 2 slices of dry bread

    · 2 cloves of garlic

    · ½ glass olive oil

    · ¼ lemon juice or vinegar

    · ½ teaspoon salt

     

    Pound the pine nuts or walnuts in a mortar. Soak the bread in water. Sequeeze by hand to extract excess water. Crumble and add to the nuts, together with crushed garlic and salt. Slowly add the olive oil and lemon juice or vinegar, beating constantly to make a smooth paste.

  • PEA SAUTE - BEZELYE SOTESI

    PEA SAUTE (BEZELYE SOTESİ)

     

    Ingredients:

    · 500 gr. pea
    · 1 tablespoon butter

    · Salt and water

     

    Put the peas into a saucepan. Boil in some water. Take it out of the heat and drain. Put peas into a frying pan. Add butter. Fry it for 15 minutes.

  • MUSTARD - HARDAL

    MUSTARD (HARDAL)

     

    Ingredients:
    · 2 tablespons mustard
    · 2 teaspoons flour

    · 2 teaspoons granulated sugar

    · 1 teacup of vinegar

    · 1 tablespoon water

     

    Put the mustard in a large bowl. Add water little by little by stirring constantly. Add flour and vinegar. Stirring constantly, add granulated sugar. When it becomes syrupy, pour into the jar and put down.

  • KETCHUP - KETCAP

    KETCHUP (KETÇAP)

     

    Ingredients:
    · 6 large tomatoes
    · ½  cinnamon bar

    · 2 carnations

    · 1 onion

    · 2 large red peppers

    · 1 green pepper

    · 1 teacup of vinegar

    · 1 teaspoon granulated sugar

    · 1 teaspoon red pepper flakes

    · Salt and sunflower oil

     

    Chop the tomatoes, peppers, and onion into big pieces. Put some oil into a saucepan. Pour these ingredients into it. Put salt and cook it on low heat until the ingredients are tender. Put cinnamon, carnations, red pepper flakes and black pepper in a piece of cloth. Tie it closely. Take the saucepan out of heat. Drain it and put into another saucepan. Put spice cloth into drained sauce. Boil it on medium heat until it is dense. Add vinegar and granulated sugar before you turn the heat off. Let simmer fo 5 minutes and put in a bottle and put down.

  • TOMATO SAUCE - DOMATES SOSU

    TOMATO SAUCE (DOMATES SOSU)

     

    Ingredients:
    · 6 big tomatoes
    · 4 cloves of garlic

    · 1 large onion

    · 1 tablespoon flour

    · 1 tablespoon olive oil

    · Salt, red pepper and water

     

    Cut the onions into small pieces. Crush the garlic in mortar. Put the onion in a saucepan and lightly brown. Add tomatoes cut into big pieces, red pepper, garlic and salt. Mix it twice. Then, add flour and enough water to cover. Cook it until tomates are well cooked. Strain it and pour it into another saucepan. Use it on macaroni. It can also be used with grilled meat.

  • TOMATO PASTE - DOMATES SALCASI

    TOMATO PASTE (DOMATES SALÇASI)

     

    Ingredients:
    · 1 kg. tomatoes for paste
    · 500 gr. beef  bones

    · 2 carrots

    · 1 celeriac

    · 2 onions

    · 2 cloves of garlic

    · 3 tablespoons olive oil

    · 2 tablespoons flour

    · 2 leaves of daphne

    · 3 glasses water

    · Salt and black pepper

     

    Break the bones into small pieces. Cut the onions in big pieces. Chop celeriac and carrots in rings. Pour them all into a saucepan pan and fry with olive oil. Add salt and black pepper and cook until it is lightly brown. When it is cooked, add tomatoes peeled and chopped in big pieces. Cook on medium heat for 5 minutes more. Add water. Cook on low heat for 2 hours. Turn the heat off. Drain and pour into another saucepan. Finally add enough flour and use in pastries.

  • SAUCE WITH YOGHURT - YOGURTLU SOS

    SAUCE WITH YOGHURT (YOĞURTLU SOS)

     

    Ingredients:
    · 1cucumber
    · 1 slice of stale bread

    · 250 gr. yoghurt

    · 5 cloves of garlic

    · 1 tablespoon olive oil

    · 2 tablespoons milk

    · Salt and black pepper

     

    Wet the bread with milk. Pill cucumber and cut it into small slices. Put cucumber into a cup. Add crushed garlick, black pepper, salt, bread and yoghurt. Add also olive oil little by little and mix well. Use it in any meal.

  • FANUGREK - CEMEN

    FANUGREK (ÇEMEN)

     

    Ingredients:
    · 2 tablespoons fanugrek
    · 2 tablespoons red pepper

    · 2 tablespoons crushed garlic

    · 1 teaspoon cumin

    · 1 teacup water

    · Salt and black pepper

     

    Crush the fanugrek in mortar well. Put it in a bowl. Add salt, black pepper, red pepper, cumin and garlic. Add water. Mix this miture until it becomes batter. Serve on bread. It can also be used in spinach and white bean meals.
