I am trying to find the name of and how to make a recipe which consists of a pastry/dough which is first rolled out then gently stretched with the back of the hands (after the manner of filo pastry or pizza dough) until it is very large and very thin.  it is then sprinkiled/covered with a savoury or sweet filling and rolled up, after which it is coiled into a large, greased pan and baked.    I was told this was a dish popular with villagers/peasants in Turkey but have never been able to find the name or recipe.    can you help?   thanks       ubeaut
