    turkish spices

    Hi there,

I'm recently returned from Turkey, and I would like to cook some of the dishes I ate in Turkey.  My problem is finding the spices, I think.  I have a little Middle-Eastern grocery store near my house that sells pre-packaged Kebab and Doner spice packs, but I'd rather mix the spices myself.  What spices go into kebabs and kofte, in particular?

always have fresh ingredients when possible.  Parsley, Mint, cumin, bahari, fresh crush red pepper.  These are a good start.
